A delicious and easy corn fritters recipe with a turkey bacon twist that the whole family will love.

Ingredients

  • 2 cups corn kernels
  • 1 cup all-purpose flour
  • 1/2 cup green onions, chopped
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a mixing bowl, combine the corn, flour, green onions, and turkey bacon.
  2. In another bowl, whisk together the egg, milk, baking powder, salt, and pepper.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a skillet over medium heat and add oil.
  5. Spoon the batter onto the skillet and flatten slightly.
  6. Cook until golden brown on both sides, about 3-4 minutes per side.
  7. Remove from skillet and place on paper towels to drain.

Notes

  • Serve with sour cream or salsa for extra flavor.
  • Can be made ahead and reheated in an oven.
