  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • ½ cup brewed coffee, cooled
  • ¼ cup coffee liqueur (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
  4. Stir in sour cream, vanilla extract, brewed coffee, and coffee liqueur until fully combined.
  5. Pour the cheesecake batter over the crust in the springform pan.
  6. Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  7. Turn off the oven, crack the door, and let the cheesecake cool completely inside.
  8. Refrigerate for at least 4 hours before serving.
