Cod and Potatoes with Rosemary Cream Sauce

  • 4 cod fillets
  • 2 cups potatoes, diced
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 2 teaspoons fresh rosemary, chopped
  • 1 garlic clove, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a baking dish, place the diced potatoes and drizzle with olive oil. Season with salt and pepper.
  3. Bake the potatoes for 20 minutes or until softened.
  4. While the potatoes are baking, heat the cream in a saucepan over medium heat. Add garlic and rosemary, stirring until fragrant.
  5. Season the cream with salt and pepper, then add the cod fillets to the cream mixture.
  6. After the potatoes have baked, place the cod on top and pour the rosemary cream sauce over everything.
  7. Bake for an additional 15-20 minutes, or until the cod is cooked through.
  8. Serve hot and enjoy!

Notes

  • For a lighter version, substitute the heavy cream with half-and-half.
