Coconut Rum (Coquito) Tiramisu

  • 1 cup coconut milk
  • 1 cup mascarpone cheese
  • 1/2 cup sweetened condensed milk
  • 1/2 cup coconut rum
  • 1 cup brewed coffee, cooled
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, mix coconut milk, mascarpone, and sweetened condensed milk until smooth.
  2. Prepare coffee and let it cool.
  3. Dip ladyfingers quickly in coffee, then layer in a dish.
  4. Spread half of the coconut mixture over the ladyfingers.
  5. Repeat layers and finish with cocoa powder on top.
  6. Refrigerate for at least 4 hours before serving.

Notes

  • For a less sweet version, reduce the condensed milk.
