Cinnamon Roll Muffins

Delight in these soft and gooey cinnamon roll muffins that offer all the flavor of classic cinnamon rolls in a convenient muffin form.

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 tablespoon vanilla extract
  • ⅓ cup brown sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. In a small bowl, mix the brown sugar and ground cinnamon for the filling.
  6. Fill each muffin cup halfway with the batter, sprinkle with the cinnamon sugar mixture, then top with more batter until each cup is about ¾ full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

  • For an extra touch, drizzle a simple icing made from powdered sugar and milk over the cooled muffins.
  • These muffins can be frozen for up to three months.
