Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a separate bowl, mix the brown sugar and cinnamon for the topping.
  6. Fill each muffin cup halfway with the batter, sprinkle with the brown sugar mixture, then top with the remaining batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For extra gooeyness, drizzle with icing after baking.
  • Store any leftovers in an airtight container.
