Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In a separate bowl, combine flour, baking powder, cinnamon, and salt.

  6. Spoon a small amount of batter into each cupcake liner, followed by a sprinkle of brown sugar, then top with more batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
