  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 cups chopped apples
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, combine sugar, melted butter, milk, eggs, and vanilla extract.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in the chopped apples and fill the muffin cups 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before serving.
