Cilantro Lime Steak Bowls

A delicious and refreshing meal that combines tender steak, fresh cilantro, and zesty lime.

  • 1 pound flank steak
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups cooked rice
  • 1 cup corn, cooked
  • 1 cup black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1 avocado, sliced

Instructions

  1. Marinate the flank steak with cilantro, lime juice, garlic powder, chili powder, salt, and black pepper for at least 30 minutes.
  2. Preheat the grill or skillet over medium-high heat.
  3. Cook the steak for about 5-7 minutes on each side, or until desired doneness.
  4. Let the steak rest for a few minutes before slicing it thinly.
  5. In a bowl, layer the cooked rice, corn, black beans, diced tomatoes, sliced steak, and avocado.
  6. Drizzle with additional lime juice and garnish with more cilantro if desired.

Notes

  • You can substitute the flank steak with chicken or shrimp for a different protein option.
