- 1 pound flank steak
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups cooked rice
- 1 cup corn, cooked
- 1 cup black beans, rinsed and drained
- 1 cup diced tomatoes
- 1 avocado, sliced
- Marinate the flank steak with cilantro, lime juice, garlic powder, chili powder, salt, and black pepper for at least 30 minutes.
- Preheat the grill or skillet over medium-high heat.
- Cook the steak for about 5-7 minutes on each side, or until desired doneness.
- Let the steak rest for a few minutes before slicing it thinly.
- In a bowl, layer the cooked rice, corn, black beans, diced tomatoes, sliced steak, and avocado.
