1 cup grated zucchini
1 cup all-purpose flour
1/2 cup cocoa powder
1 cup sugar
1/2 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mix the grated zucchini, sugar, and vegetable oil until well combined.
Add the eggs and vanilla extract, stirring until smooth.
In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in the chocolate chips.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra chocolate flavor, consider adding a sprinkle of cocoa powder on top before baking.
