  • 3 large eggs
  • 2 cups grated zucchini
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, mix the granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
  4. Add the grated zucchini and vanilla extract to the wet ingredients and stir until mixed.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chocolate chips, if using.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely.
