Chocolate Espresso Banana Bread

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup espresso or strong coffee
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the bananas completely. Add melted butter, and mix well.
  3. Stir in the sugar, eggs, vanilla, and espresso.
  4. In a separate bowl, whisk the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture and stir until just combined. Fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a more intense chocolate flavor, add an extra 1/4 cup of cocoa powder.
  • Feel free to substitute dark chocolate chips for semi-sweet ones.
