- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 4 cups chicken broth
- 1 cup frozen peas
- 1/4 cup all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté until tender.
- Add the chicken breasts to the pot and cook until no longer pink.
- Stir in flour, thyme, and garlic powder. Cook for 1 minute.
- Add chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Shred the chicken and return to the soup.
- Stir in heavy cream and frozen peas. Cook until heated through.
- Season with salt and pepper. Serve hot.
Notes
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- To thicken the soup, add more flour or some cornstarch mixed with water.
