  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté until tender.
  2. Add the chicken breasts to the pot and cook until no longer pink.
  3. Stir in flour, thyme, and garlic powder. Cook for 1 minute.
  4. Add chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Shred the chicken and return to the soup.
  6. Stir in heavy cream and frozen peas. Cook until heated through.
  7. Season with salt and pepper. Serve hot.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • To thicken the soup, add more flour or some cornstarch mixed with water.
