Chicken Enchilada Soup

A comforting and delicious chicken enchilada soup that is easy to make and perfect for any occasion.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound cooked chicken, shredded
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese, for serving
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the shredded chicken and sauté for a few minutes.
  3. Stir in diced tomatoes, chicken broth, black beans, corn, chili powder, cumin, garlic powder, and onion powder.
  4. Bring to a simmer and cook for 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the soup hot and top with shredded cheese and fresh cilantro.

Notes

  • For extra flavor, consider adding diced onion and bell peppers at the sautéing stage.
  • This soup freezes well; store in an airtight container for up to 3 months.
