Chicken and Corn Chowder

  • 1 cup corn kernels
  • 4 strips turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 large potatoes, diced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot, sauté until soft.
  3. Stir in the potatoes, chicken broth, and thyme. Bring to a boil.
  4. Reduce heat, cover, and simmer until potatoes are tender, about 15 minutes.
  5. Add the chicken, corn, and heavy cream. Cook until heated through.
  6. Season with salt and pepper. Serve topped with crispy turkey bacon.

Notes

  • This chowder can be easily customized with your favorite vegetables.
  • For a thicker consistency, blend a portion of the chowder and return it to the pot.
