Cheesy Tomato Tortellini Soup

  • 2 cups cheese tortellini
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and cook for another minute.
  3. Pour in the crushed tomatoes and vegetable broth; bring to a simmer.
  4. Stir in the tortellini and cook according to package instructions.
  5. Once the tortellini is cooked, lower the heat and stir in the heavy cream.
  6. Add Italian seasoning and season with salt and pepper to taste.
  7. Simmer for a few more minutes, then serve hot, garnished with fresh basil.
