  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup cream cheese
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine grated carrots, flour, sugars, oil, eggs, and vanilla.
  3. Add baking powder, cinnamon, and nutmeg, mixing until just combined.
  4. In another bowl, beat cream cheese and sour cream together until smooth.
  5. In a greased springform pan, layer the carrot cake batter and cheesecake mixture alternately.
  6. Bake for about 60 minutes or until set.
  7. Allow to cool before serving.
