Caribbean Chicken and Rice

A delicious and comforting Caribbean dish that combines tender chicken and flavorful rice.

Ingredients

  • 2 cups long-grain rice
  • 1.5 pounds chicken thighs
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sautéing until softened.
  3. Incorporate chicken thighs, cooking until browned on all sides.
  4. Stir in rice, cumin, paprika, salt, and pepper.
  5. Add black beans, diced tomatoes, and chicken broth.
  6. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  7. Remove from heat and let it sit covered for an additional 5 minutes.
  8. Fluff rice with a fork before serving.

Notes

  • For extra flavor, marinate chicken in spices for a few hours before cooking.
  • Serve with a side of avocado or a fresh salad.
