- 2 cups long-grain rice
- 1.5 pounds chicken thighs
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 cups chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sautéing until softened.
- Incorporate chicken thighs, cooking until browned on all sides.
- Stir in rice, cumin, paprika, salt, and pepper.
- Add black beans, diced tomatoes, and chicken broth.
- Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff rice with a fork before serving.
