California Roll Cucumber Salad

A refreshing and easy twist on the traditional California roll, this salad features all the flavors of sushi without the need for rice or seafood.

Ingredients

  • 1 avocado
  • 1/2 cup crab meat (or imitation crab)
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Slice the cucumbers thinly and arrange them in a large bowl.
  2. Dice the avocado and add it to the bowl along with the crab meat.
  3. In a separate bowl, whisk together the rice vinegar, soy sauce, and sesame oil.
