  • 8 flour tortillas
  • 4 large eggs
  • 1 cup shredded cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup diced bell peppers
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a skillet, heat the olive oil over medium heat.
  2. Whisk together the eggs, salt, and pepper in a bowl.
  3. Pour the eggs into the heated skillet, and cook until scrambled.
  4. Stir in the bacon, bell peppers, and cheese until well combined.
  5. Spoon the mixture onto each tortilla and roll tightly.
  6. Place the rolled taquitos seam-side down in a baking dish.
  7. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until golden brown.
