- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
- 1/2 cup chocolate chips
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the butter and granulated sugar until fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, then let cool on the baking sheet for a few minutes before transferring to a wire rack.
- For the filling, whisk together the powdered sugar and heavy cream until smooth and spreadable.
- Once the cookies are cool, spread a dollop of the cream filling on the bottom side of one cookie and top it with another cookie.
- Melt the chocolate chips in a microwave-safe bowl, then drizzle over the assembled cookies.
