Boston Cream Pie Cookies: A Delicious Twist on a Classic Dessert

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and granulated sugar until fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, then let cool on the baking sheet for a few minutes before transferring to a wire rack.
  7. For the filling, whisk together the powdered sugar and heavy cream until smooth and spreadable.
  8. Once the cookies are cool, spread a dollop of the cream filling on the bottom side of one cookie and top it with another cookie.
  9. Melt the chocolate chips in a microwave-safe bowl, then drizzle over the assembled cookies.

Notes

  • For a richer flavor, add a pinch of salt to the dough.
