  • 1/2 cup blueberries
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix until combined.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in the blueberries gently.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet.
  8. For the streusel topping, mix equal parts flour, sugar, and butter until crumbly, then sprinkle on top of the cookies.
  9. Bake for 12-15 minutes until edges are golden.
  10. Allow to cool before serving.

Notes

  • For a sweeter cookie, add a bit more sugar.
