Blueberry Breakfast Quesadilla

A delicious and easy recipe for a breakfast quesadilla filled with blueberries.

Ingredients

  • 1 cup fresh blueberries
  • 2 large flour tortillas
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the cream cheese, honey, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly over each tortilla.
  3. Sprinkle the fresh blueberries on one half of each tortilla.
  4. Top with shredded mozzarella cheese.
  5. Fold the tortilla in half to create a quesadilla.
  6. Heat a non-stick skillet over medium heat and cook the quesadilla for about 2-3 minutes on each side, until golden brown and the cheese is melted.
  7. Cut into wedges and serve warm.

Notes

  • Serve with additional honey or maple syrup if desired.
