Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine buttermilk, vegetable oil, egg, vanilla, and lemon zest. Mix until well combined.
