Beef Stew

A delicious beef stew made heartier with the addition of turkey bacon, perfect for a comforting meal.

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 slices turkey bacon, chopped
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and drain on paper towels.
  2. In the same pot, brown the beef pieces in the bacon fat over medium-high heat. Remove and set aside.
  3. Add the onions and garlic to the pot, sautéing until soft.
  4. Return the beef to the pot, along with carrots, potatoes, broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
  6. Stir in the cooked turkey bacon before serving.
