- 2 pounds beef chuck, cut into 1-inch pieces
- 4 slices turkey bacon, chopped
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- In a large pot, cook the turkey bacon over medium heat until crisp. Remove and drain on paper towels.
- In the same pot, brown the beef pieces in the bacon fat over medium-high heat. Remove and set aside.
- Add the onions and garlic to the pot, sautéing until soft.
- Return the beef to the pot, along with carrots, potatoes, broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
- Stir in the cooked turkey bacon before serving.
