Beef Enchilada Casserole

A delicious and easy beef enchilada casserole that will please the entire family.

  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 1 cup corn tortillas
  • 1 can black beans, drained
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat and cook the ground beef until browned.
  3. Stir in the cumin, chili powder, garlic powder, and onion powder.
  4. Layer the bottom of a baking dish with corn tortillas, followed by the beef mixture, black beans, and enchilada sauce.
  5. Top with shredded cheese.
  6. Bake for 25-30 minutes until cheese is bubbly and golden.
  7. Let cool for 5 minutes before serving.

Notes

  • For added flavor, consider adding diced onions and bell peppers.
  • Serve with sour cream and guacamole on the side.
