  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon brown sugar
  • 2 tablespoons Dijon mustard
  • 2 cups beer (preferably Belgian ale)
  • 2 cups beef broth
  • 2 bay leaves
  • 3 sprigs fresh thyme

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat. Add the beef and brown on all sides.
  2. Remove the beef and set aside. In the same skillet, add the sliced onions and garlic, cooking until softened.
  3. Add the browned beef back to the skillet along with salt, pepper, brown sugar, and Dijon mustard. Stir to combine.
  4. Pour in the beer and beef broth, then add bay leaves and thyme. Bring to a simmer.
  5. Transfer the mixture to a slow cooker and cook on low for 6-8 hours or until the beef is tender.
  6. Remove bay leaves and thyme before serving. Enjoy your beef carbonnade!
