  • 2 medium sweet potatoes
  • 1 pound boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn
  • 1 avocado sliced
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
  3. Bake the sweet potatoes for about 45-60 minutes until tender.
  4. While the sweet potatoes are baking, heat olive oil in a skillet over medium heat.
  5. Season the chicken breasts with garlic powder, onion powder, salt, and pepper, then add to the skillet.
  6. Cook the chicken for about 5-7 minutes on each side until cooked through.
  7. Brush the chicken with BBQ sauce and let it simmer for an additional 2-3 minutes.
  8. Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
  9. Top the sweet potatoes with BBQ chicken, corn, avocado, and green onions.

Notes
