- 2 boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 2 cups cooked rice for serving
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes into cubes. Toss them with olive oil, salt, pepper, paprika, and garlic powder.
