BBQ Chicken & Roasted Sweet Potato Bowls

A delicious and easy recipe for BBQ chicken and roasted sweet potato bowls, perfect for a quick weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 cups cooked rice for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into cubes. Toss them with olive oil, salt, pepper, paprika, and garlic powder.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
  4. While the sweet potatoes are roasting, cook the chicken in a skillet over medium heat until cooked through, about 6-7 minutes per side.
  5. Brush the chicken with BBQ sauce and cook for an additional 2 minutes.
  6. Slice the chicken and serve it over rice with roasted sweet potatoes.
