- 1 pound salmon fillets
- 1 cup cooked rice
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon lime juice
- 1/4 cup green onions, chopped
- 1 avocado, sliced
- 1 lime, wedges for serving
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice to create the sauce.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Spread a layer of the sauce on top of the salmon.
- Bake for 12-15 minutes, or until the salmon flakes easily with a fork.
- Meanwhile, prepare the rice in serving bowls.
- Once the salmon is done, place portions on top of the rice.
- Add avocado slices and sprinkle with green onions. Serve with lime wedges and additional sauce if desired.
Notes
- For extra flavor, marinate the salmon in the sauce for 30 minutes before baking.
- Adjust the spiciness by adding more or less sriracha to your taste.
