Banana Pudding Cheesecake

A deliciously creamy dessert that combines the classic flavors of banana pudding with the richness of cheesecake.

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups mashed ripe bananas
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon banana extract

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the crushed graham crackers and melted butter.
  3. Press the mixture firmly into the bottom of a springform pan to create the crust.
  4. In another bowl, beat the cream cheese and granulated sugar until smooth.
  5. Add the eggs, one at a time, and mix well after each addition.
  6. Stir in the vanilla extract and mashed bananas.
  7. Pour the cream cheese mixture over the crust in the springform pan.
  8. Bake for about 50 minutes or until the center is set.
  9. Let it cool at room temperature, then refrigerate for at least 4 hours.
  10. Whip the heavy cream with powdered sugar and banana extract until stiff peaks form.
  11. Spread the whipped cream over the chilled cheesecake before serving.

Notes

  • For best flavor, use very ripe bananas.
  • This cheesecake can be made a day in advance.
