Baked Zucchini Fries

A delicious and healthy alternative to traditional fries, baked zucchini fries are crispy, flavorful, and guilt-free.

Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice zucchinis into fry shapes.
  3. In one bowl, whisk the eggs. In another bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Dip each zucchini slice in eggs, then coat with the breadcrumb mixture.
  5. Place on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes or until golden brown.
  7. Serve warm with your favorite dipping sauce.
