Baked Cottage Cheese Eggs

A delicious and nutritious breakfast featuring baked cottage cheese eggs and crispy turkey bacon.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked and crumbled turkey bacon
  • 1/4 cup shredded cheese (optional)
  • 1 tablespoon chopped fresh chives (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, eggs, salt, and pepper until well blended.
  3. Fold in the cooked turkey bacon and half of the shredded cheese if using.
  4. Pour the mixture into a greased baking dish.
  5. Top with the remaining shredded cheese and chopped chives if desired.
  6. Bake for 25-30 minutes or until the eggs are set and the top is golden.

Notes

  • For a spicier dish, add some diced jalapeños.
  • Feel free to substitute turkey bacon with regular bacon or ham.
