Avocado Deviled Eggs

The perfect blend of creamy avocado and savory turkey bacon makes these deviled eggs a delicious twist on a classic appetizer.

Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 2 strips turkey bacon, cooked and crumbled
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro

Instructions

  1. Hard boil the eggs by placing them in a pot, covering with water, and boiling for 9-12 minutes.
  2. Remove the eggs from the heat, cool in an ice bath, peel, and slice in half.
  3. Remove the yolks and place in a bowl. Mash with avocado, mayonnaise, mustard, lime juice, salt, and pepper until smooth.
  4. Stir in the crumbled turkey bacon and cilantro.
  5. Fill the egg whites with the avocado mixture.
  6. Garnish with extra cilantro if desired and serve.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the mixture.
  • These can be made a few hours in advance and refrigerated until served.
