- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 large carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- In a large pot, brown the beef cubes over medium heat.
- Add the onions and garlic, cooking until softened.
- Stir in the tomato paste, thyme, rosemary, and bay leaf.
- Pour in the beef broth and bring to a boil.
