Autumn Harvest Beef Stew

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add the onions and garlic, cooking until softened.
  3. Stir in the tomato paste, thyme, rosemary, and bay leaf.
  4. Pour in the beef broth and bring to a boil.
  5. Add the carrots and potatoes, then reduce heat to low.
  6. Cover and simmer for 1.5 to 2 hours, until the beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • For a thicker stew, add a slurry of cornstarch and water 10 minutes before serving.
  • Leftovers can be delicious the next day as the flavors meld.
