  • 1 cup Belgian beer
  • 2 tablespoons tomato paste
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Add the beef cubes to the pot, browning them on all sides.
  4. Stir in the tomato paste, then add the beer and beef broth.
  5. Add the carrots, potatoes, bay leaves, thyme, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.
  7. Remove bay leaves before serving.
