  • 2 cups peeled, chopped apples
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 2 tablespoons cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine the melted butter, eggs, and milk.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the apples.
  5. In a separate bowl, mix together the brown sugar, flour, and cinnamon for the crumb topping. Add the cubed cold butter and mix until crumbly.
  6. Divide the batter among the muffin cups and sprinkle the crumb topping over each.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before serving.
