Instructions

  1. In a saucepan, reduce apple cider over medium heat until it is about 1/2 cup.
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another bowl, cream butter and sugar until light and fluffy. Add egg and vanilla, then mix in the cider.
  4. Gradually add the dry ingredients to the wet mixture.
  5. Drop spoonfuls of the batter on a baking sheet and bake at 350°F for about 10 minutes.
