- 2 pounds pork shoulder
- 2 cups apple cider
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 sweet potatoes peeled and cubed
- 1/4 cup butter
- 1/4 cup milk
- 1 teaspoon cinnamon
- In a large pot, heat olive oil over medium heat. Add pork shoulder and brown on all sides.
- Add chopped onion and garlic, sauté until translucent.
- Pour in apple cider, bring to a simmer, cover, and cook for about 2 hours.
- Meanwhile, boil sweet potatoes in salted water until tender, then drain.
- In a bowl, mash sweet potatoes with butter, milk, and cinnamon until smooth.
- Once pork is cooked, shred it and serve with sweet potatoes.
