  • 2 cups apple cider
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 sweet potatoes peeled and cubed
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 teaspoon cinnamon

Instructions

  1. In a large pot, heat olive oil over medium heat. Add pork shoulder and brown on all sides.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Pour in apple cider, bring to a simmer, cover, and cook for about 2 hours.
  4. Meanwhile, boil sweet potatoes in salted water until tender, then drain.
  5. In a bowl, mash sweet potatoes with butter, milk, and cinnamon until smooth.
  6. Once pork is cooked, shred it and serve with sweet potatoes.

  • For extra flavor, marinate the pork overnight in apple cider.
