  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 large sweet potatoes
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon maple syrup

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pork tenderloin with salt, pepper, cinnamon, and nutmeg.
  3. In a pan, heat olive oil over medium heat and sear the pork on all sides until browned.
  4. Transfer the pork to a baking dish and pour the apple cider over it.
  5. Bake in the preheated oven for about 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  6. Meanwhile, peel and chop the sweet potatoes, then boil in salted water until tender.
  7. Drain the sweet potatoes, then mash with heavy cream, butter, and maple syrup until smooth and creamy.
  8. Remove the pork from the oven and let it rest for a few minutes before slicing.
  9. Serve the sliced pork over the mashed sweet potatoes, drizzled with the cooking juices.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the seasoning.
  • Feel free to use other root vegetables for mashing.
