  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the apple cider and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fill each cupcake liner 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool completely before frosting.

Notes

  • For best results, use fresh apple cider.
  • Allow the cupcakes to cool completely before adding the frosting to prevent melting.
