  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in apple cider, vanilla extract, cinnamon, nutmeg, and salt until fully combined.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake for 45-50 minutes or until the center is set. Allow to cool.
  7. Chill in the refrigerator for at least 4 hours before serving.
