  • 2 cups apple cider
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the pork shoulder on all sides until browned.
  3. Add sliced onion and minced garlic, sautéing until softened.
  4. Pour in the apple cider, and add thyme, salt, and pepper.
  5. Bring to a simmer, then cover and transfer to the oven.
  6. Cook for 4-5 hours, until the pork is tender and falls apart easily.
  7. Remove the pork and let it rest before shredding.
  8. Strain the liquid, then return to the stove and reduce until slightly thickened.
  9. Serve the pork with the reduced sauce.
