Ingredients

  • 1 cup dried chickpeas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Olive oil for spraying

Instructions

  1. Soak the dried chickpeas in water overnight.
  2. Drain and rinse the chickpeas, then add them to a food processor along with onion, garlic, parsley, cilantro, cumin, coriander, baking powder, and salt.
  3. Pulse until the mixture is coarse and well combined.
  4. Form small balls or patties from the mixture.
  5. Preheat the air fryer to 375°F (190°C).
  6. Spray the falafel balls with olive oil and place them in the air fryer basket.
  7. Cook for 12-15 minutes, or until golden brown and crispy.

Notes

  • For best results, do not use canned chickpeas as they can make the falafel too mushy.
  • This recipe is lower in fat than traditional deep-fried falafel.
